Mout is er in twee vormen: moutbloem en moutextract. Moutbloem wordt gemaakt van gekiemde gerst of tarwe. Tijdens het kiemen ontstaan veel enzymen. Het belangrijkste is alpha-amylase. Na het kiemen worden de granen gemalen en gedroogd. Moutextract is een waterachtig aftreksel van tarwemout dat ingedikt of gedroogd is.
