Zowel zoete, zoute als andere varianten van sojasaus komen van de (zwarte) bonen\/zaden van de sojaplant (Glycine max).Gefermenteerd en met toevoeging van zout en andere ingredi\u00ebnten, zoals geroosterd tarwemeel, leveren ze ketjap op – een saus die vergelijkbaar is met tabasco<\/a> en Worcestershiresaus<\/a>. Sojabonen bevatten 30 tot 45 procent eiwit, 15 tot 20 procent olie en 15 tot 25 procent koolhydraten. Ze hebben weinig vitamine A, maar wel veel vitamine B1 en B2. Gemalen, gekookte en vergiste bonen worden verwerkt tot sojakaas en tahoe<\/a>. Deze worden in plakken gesneden en gebakken en kunnen worden gegeten als bij-gerecht of versnapering bij oosterse gerechten.<\/p>\n

In de slagerswereld wordt sojasaus wordt gebruikt om marinades te maken die grillproducten een typische aromatische smaak moeten geven zoals grillworst<\/a> en Zeeuws spek<\/a>.<\/p>\n

Niet te verwarren met ketjap.<\/p>\n
